Around eight hundred drinks across a Friday night service. That is the working rhythm of a city venue bartender. By the end of the traineeship the rhythm becomes muscle memory. The Certificate Three in Hospitality with bar specialty is fifteen units. Six core and nine specialty. Mandatory units include responsible service of alcohol and food safety. The qualification runs two years as a traineeship combining work in a venue with one day of TAFE a week. Specialty units cover responsible service, espresso preparation, non alcoholic beverages and table service. The day is built around the rush. Polishing wine glasses with a microfibre cloth and stacking the back bar before the five pm rush. Pulling a perfect Guinness with the two part pour and a one hundred and nineteen second settle.
